"Nutrition is the care and feeding of an organism. The health of a cell, tissue, organ, or human being is directly influenced by the quality, quantity, variety, digestibility and absorption of nutrients in the food one consumes. Nutrients consist of macronutrients (proteins, fats, and carbohydrates), micronutrients (vitamins and minerals) and phytonutrients (plant compounds that neutralize free radicals, cool inflammation, and support cell repair). Research has demonstrated that fresh, local, seasonal, and organic food has significantly greater amounts of health supportive micronutrients and phytonutrients and lower amounts of health damaging pesticides, herbicides, and   chemicals.  In studies comparing the health benefits of nutrients from fresh, whole foods versus those provided by dietary supplements or enriched, conventional food, the whole food group was found to be far superior. This validates the long held axiom that you are what you eat.  Eating for Health is an invitation for us to make conscious choices to become more involved in sourcing fresh, local food; preparing more home-cooked family meals; eating a bit less and digesting a bit more; and being in better tune with our bodies and with the soil, air, water, and farmers who enable us to enjoy our food and our lives."
