Lactose is a natural sugar found in milk. In order to digest this sugar, a specific enzyme, lactase, must be present. Those who are lactose intolerant — the majority of people — do not produce enough lactase to break down lactose, in turn causing the bacteria in the gut to ferment the lactose sugar resulting in discomfort, gas, and bloating.
