A mechanical process of breaking down the fat globules in milk into smaller molecules. This allows for the fat to be evenly suspended into the milk and to stay integrated rather then separating as cream. The purpose of this process is to extend the shelf life of the milk product. A majority of milk sold in the US is homogenized.
