Most consumers are conscious of fruit and vegetable seasons, but few are aware of the seasonality of seafood. Adam Geringer-Dunn and Vinny Milburn are the co-owners of Greenpoint Fish & Lobster Co., a seasonality-based seafood restaurant in Brooklyn. They explain how we have become detached from seafood seasonality due to imported and poorly-managed farmed fish. They encourage chefs and consumers to diversify their choices: not only is a seasonality-based diet more sustainable, it can be rewarding and full of delicious new flavors and discoveries!
